I found myself a dashboard in the same colour ( Cohiba braun) leather as my seats and doors.
But it was a hel of a job to put it in.
Below I put the old and new one next to each other. The black one is the standard you get and the brown one is in premium bmw merino leather.

I did it in 8 to 9 hours, speeds up if you know what your doing. I went carefully because I didn't want to break anything.

The standard one isn’t particularly heavy, most of the weight is in the airbag.

There at one point was, which had all the mount points for AC radio cluster etc. There's another with blanks for those but that's track car stuff only.

No I didn't replace it. Your idea sounds great, but would be costly and difficult. Carbon doesn't have much give which makes it more difficult to get it in the right position. Plus the dashboard would need to be a almost perfect fit for your car because of the stiffness of the carbon. If you pull it off, I will be your number one supporter.

Today I tried my hand as an upholsterer, covered the sides of the dashboard and the A-pillars with Alcantara. Goes nice with the rest of the Alcantara, carbon and leather.
