I skimmed through this, forgive me if I overlooked a suggestion. Fuel filter under the rear seat opposite of the fuel pump can cause poor running issues. Clogged up or they get cracks in them and you loose pressure.
\Thank you, I will look into the fuel filter

Got a log of the fuel pressure and o2 sensors. if someone can quickly take a look, it'll be greatly appreciated.

I wish I could make out exactly what you posted. Is that green line the pressure and grey line rpms? That's what the legend on the bottom reflects....I think. So, shouldn't the fuel pressure be spiking all the time in conjunction with the increase in rpms?

Maybe pull the PCV and the flapper brake clean em shake out make sure they are functioning. Seems like the only other thing I would check along with all the other suggestions. The PCV system can get gunked up after all that work was done. The other possibility could be the actual valve cover. In any case good luck an let us know if you find the root cause. šŸ‘šŸ»
